Ingredients Method: Soak urad daal and for 3-4 hours. Remove the water from the dal and grind to a paste with green chillies, salt and peppercorns using little water. Grind fresh coconut into chunks. Chop curry leaves and mix together with coconut and batter. salt to taste Method: Soak the tamarind in 1 cup water for 20 minutes. Squeeze it out, to prepare 1 cup of juice. Wash and clean the dal. In pressure cooker add 2 cups of water,washed dal, turmeric powder and 1 teaspoon of oil.Cook till it is done.Then mash it coarsely.In a separate pan, heat to medium and pour in the remaining oil. Once the oil is hot, add the chilies, mustard seeds, fenugreek and curry leaves and sauté for 2 minutes. Add the onion and brown lightly. Add tomatoes and sambar powder Add the tamarind extract and let boil lightly until the onions and tomatoes are cooked. Add the mixture of dal with asafoetida,vegetable of choice. Allow this to boil for 5 to 10 minutes and remove from the heat. Garnish with cilantro. |
