Ingredients:
1 cup rava (sooji/ samolina)
1 cup sugar
1 cup milk
1 cup water
1/4 tsp crushed cardamom powder
2 tbsp almonds, cashews coarsely crushed (optional)
1 tbsp raisins
1/2 banana sliced
1 pinch saffron (optional)
1/4 cup pure ghee
1 tsp pure ghee
Method: Heat water and milk separately and keep aside. Heat the kadhai with ghee. Put rava and roast it continuously without burning it. Rava should change its color from white to light pink(not even brown). Add banana slices and roast for more 1-2 minutes. When it starts to give aroma and turn flame to very low and start adding water and milk accordingly, while stirring continuously before the lumps are formed. Rava will be fluffy and will get doubled. Cover the kadhai with lid for 2 minutes. Now add sugar, dry fruits and cardamom powder, saffron, mix well and cover with lid to cook the rava well. When it is done, pour the remaining 1 tsp ghee onto it. Serve hot with any of your favorite salty snacks.
