Ingredients:
2 cup wheat flour
salt to taste
water as needed to make dough
1 tsp oil
ghee
Method: Combine the flour and salt in a large bowl. Start adding just enough water to knead a soft, pliable dough. Put oil from all sides and cover the dough with oil. Set aside for 20- 30 minutes, covered. Make small lemon size balls of the gough. Heat griddle/ tava. Roll each ball into a disc at least 5-6 inches in diameter and thin. Put phulka on the hot tava. Cook till you see small bubbles start to form on top. Flip and cook the other side for 15-20 sec, until small bubbles form. Take the phulka off the tava and lower the flame to medium to low. Put the phulka directly on the flame. It should puff up like balloon. Cook from both sides. Remove from heat and apply ghee on top of it. Do the same for the rest of the phulkas. Serve hot with your favorite curry/ vegetable.
