Ingredients:
3 cups flour
2-3 tbsp oil
1 tsp sugar
1 1/2 tsp salt
1 1/2 cup or less water
frying pan or tava
ghee/ butter
Method: Put flour, salt, sugar and 1 tsp oil in a mixing bowl, start adding water and knead until firm dough( little firmer than chapati dough). Add extra water or flour if needed. Make equal parts and shape them like balls.
Take a dough ball and rolling pin and start rolling on a clean, dry, plain surface. Dust some flour for ease. Make a thick 4 inch diameter circle, put some oil/ ghee/ butter on it and spread equally. Then fold it diagonally, again put few drops of oil and spread. Now fold it quarterly to make a triangle shape. Dust some flour and start rolling till it becomes 6-7 inch in diameter round or make a triangle.(little thicker than chapati) Put frying pan on high heat and fry the paratha. Wait 5 seconds till bubble shapes appear on the surface, add a little ghee around the edges of the paratha, which should swell up. Then turn it, and put few drops of ghee on the fried side, and spread. Then after 10 seconds turn it over again and wait at least 10 seconds and turn it back and make sure paratha gets nice brown spots on both sides. Now remove from heat. Do the rests same. Serve them hot with your favorite curry or vegetable.
