Ingredients
4 cup Maida
1 cup oil
1 tsp whole black peppercorns
1 tsp carom seeds
1/2 tsp cumin seeds
1 tsp onion seeds (optional)
1/2 tsp kasuri methi (dry fenugreek)
1 tsp sugar
oil for deep frying
salt to taste
Method: Coursely grind carom, cumin seeds and peppercorns. Mix the flour, salt and all powder together in a bowl. Make a well in the center and pour hot 1 cup oil in it. Carefully mix it and add water little at a time. Make a firm dough. Cover with the damp cloth and set aside for 1 hour. Divide the dough into small balls and roll out them. Prick them with the help of fork. Heat the oil in a kadhai. Fry the rolled mathris in batches over moderate heat. Fry till golden brown, do not over fry. Can be stored in airtight container after cooled completely.
