Ingredients:
2 large aloo (pototoes) boiled
4-5 cups wheat flour
1/2 tsp red chili powder
1/4 tsp cumin powder
1/4 tsp carom seeds(ajwain)
1/4 tsp turmeric
2 tbsp cilantro chopped
2 green chilies chopped
salt to taste
2-3 tbsp ghee
Method: Grate potatoes and mix all ingredients except flour. Mash and mix well. Start adding flour little at a time. You may need less/ extra flour according to potato size. Make a firm dough. Use little water if needed. Keep aside for 15 min.
Heat griddle/ tava. Start rolling small portion using extra flour. Make a thick 4 inch diameter circle, put some oil/ ghee on it and spread equallyThen fold it diagonally, again put few drops of oil and spread. Now fold it quarterly to make a triangle shape. Make a round by hand. Dust some flour and start rolling till it becomes 6-7 inch in diameter round. Fry paratha on hot tava with ghee, applying on both sides. Do the same for the rest of the portions. Serve hot with dahi/ yogurt.
